How to make cake flour out of ordinary flour ?

Plain or all purpose flour types could be quite easily transformed to create a cake flour type like properties, in baking behaviour. Because the weight of cake flour is much lower due to its density, a portion of the standard flour being converted can be substituted with potato flour or cornstarch (called also maize or cornflour) instead. This tactic lowers down its protein and gluten percentage (hence the lower density) which therefore gives the body properties similar to those of the cake flour.

For the ratio: simply remove 3 tablespoons out from the flour that is being converted and replace them with also 3 tbsp. of either the potato flour or the cornstarch.

  1. 3 1/2 cups of cake flour equals how much of standard flour? Great it worked perfect! From this amount of flour in 3.5 cups I simply removed those 10 1/2 ( 10.5 ) table spoons and replaced them with the corn starch, which made real good cake flour. 3 table spoons per one cup ( 9 ) and a one and half ( 1.5 ) spoon per half cup. The baking went really well and the results are even better. Thank you very much for this calculator.

  7. Hi Sarah,
It might be approximately the same type. If the cake flour is basically of the same quality or structure you are going to bake with, the conversions from 1000 grams (1kg) comes to 10 US cups. One cup makes 100 grams of this cake flour. How did it end up, what were the final results of your creation?
